Tired of the same old lunch every day? Why don't you spice up your meals with these delicious vegan lettuce wraps no tofu! Instead, these lettuce wraps are made with a quick and easy chickpea filling with either a buffalo, teriyaki, or bbq flavor! So easy and perfect to make ahead.
Heat 1 tablespoon coconut oil in a skillet and add celery, onion and garlic. Cook until veggies are soft and translucent, stirring frequently.
Add chickpeas and ¼ cup water. Cook about ten minutes on low covered with a lid.
Remove from the heat and stir in your sauce of choice.
Prep Veggies
Separate lettuce out lettuce leaves and trim off the bottoms as needed. Rinse the lettuce leaves and place into a colander to drain. Pat dry if needed before serving.
Cut and slice up the veggies you want to use.
To Serve
When ready to serve place chickpea filing into lettuce cups and top with your choice of toppings and mashed avocado.

For crispy lettuce leaves, make sure they are dry. If you have one, a salad spinner works great.
