Delicious fluffy blueberry and chia pancakes made with chia eggs and packed full of berry flavor. Lightly sweet and ready for your favorite pancake toppings.
Measure out soy milk and add the two tablespoons of vinegar. Allow to sit for five minutes.
Place 2 tablespoons of chia in a blender or spice grinder and process until ground. Consistency will be similar to flour. Add 6 tablespoons of water and allow to sit for five minutes.
Place the dry ingredients into a bowl.
When time is up, add the chia egg, soy milk mixture, oil and vanilla into a separate bowl and whisk to distribute the chia egg and eliminate most lumps. Add to dry ingredients and stir with a spoon just until mixed.
Gently fold in the berries. Cook pancake batter as soon as possible for maximum fluffiness.
Heat a non-stick skillet over medium heat. Spray or brush with oil, add pancake batter ¼ cup at a time for regular sized pancakes or 1 tablespoon for mini pancakes.
Cook on one side until most of the bubbles on the top pop. Then flip over and continue cooking until lightly browned.
Serve up topped with fresh berries and your other favorite pancake toppings.

Recipe makes about 16 pancakes using ¼ cup measure.Expert Tips:
Be sure to grind the chia seeds for lighter, fluffier pancakes. If you don’t have a coffee/spice grinder, then use your blender or food processor.
Mix the chia egg with the milk before adding it to the flour mixture. It may seem like an extra step since everything will be mixed together in the end but it is the perfect way to mix the chia throughout the pancake batter.
Add liquid to dry ingredients only when you are ready to cook. As soon as you mix them together, the vinegar activates the baking soda. If you allow it to sit for too long then the baking soda becomes less active and you may end up with flatter pancakes
Allow the pancake to fully cook on the first side before you flip it. The signs to look for include that most bubbles on the surface of the pancake have popped and don’t fill back in. Plus, the edges of the pancake are beginning to look a little dried out.
