Vegetarian foil packets filled with chopped vegetables, chickpeas and a homemade vegan teriyaki sauce are a quick and easy weeknight meal solution. They taste great and are ready in less than 45 minutes.
Put all the ingredients for the sauce in a pan, heat for 5-10 minutes. Turn off the heat and set aside or store until ready to assemble the packets.
Tear off or cut parchment paper or foil into pieces that are approximately 9-10 inches long.
Fold each piece in half lengthwise and then open up to flat.
On the right side of the crease of foil or paper begin laying out the vegetables, broccoli, onion, eggplant and peppers.
Top each group of veggies with ½ cup of chickpeas.
Drizzle vegetables with one teaspoon of sesame oil. Then top with 1 tablespoon teriyaki sauce. Reserve remaining sauce for serving.
Fold the empty half over to cover the ingredients. Start at the top left corner and fold down the ends of the paper together in order to seal the food inside and create a pocket. Continue folding the edges.
When you get to the bottom and all the edges are folded, use a stapler and staple the last fold on the parchment. For extra security, staple at the beginning of the fold on the top and then also in the middle.
Place packets on a baking sheet and put in a 400 degree F hot oven to cook for 25 minutes. When ready, remove from the oven and cut each packet open. Remove from the packet, top each with a more teriyaki sauce and garnish with toasted sesame seeds and diced green onions. Serve it up with rice, noodles or your favorite side dish.

Tips for BEST results:Cut the onion, bell pepper and eggplant into similar sized pieces so they will all cook in about the same amount of time.Cut the larger broccoli florets into smaller pieces so they fit better in the packets and cook in the allotted time.Carefully and tightly fold the packets to keep all the juice inside.Don’t forget to secure the packet with a staple(s) if it seems loose and may come undone in the oven.To save time, lay all the paper or foil out on the counter and fill them with each ingredient at the same time.
