Place all the ingredients for the dressing except the oil in a blender. Blend until smooth. Slowly add oil. Taste and add salt and pepper as needed. Set aside until ready to serve.
Toast the walnuts
Chop the walnuts into small pieces and place on a baking tray. Place into the oven at 350 degrees F and cook for 5-8 minutes or until toasted and lightly browned. Stir halfway through and keep a close eye on them so they don’t burn.
Prep the fruit and vegetables for the salad.
Wash strawberries in clean water and remove the green top. Cut each strawberry into quarters or halves depending on the size. Rinse blueberries and allow to dry on a paper towel. Rinse tomatoes and golden berries and cut in half.
Peel the cucumber and cut into ¼ inch slices. Cut all slices into quarters. Place well-drained fruit into a bowl. Add the red onion and sliced avocado.
When ready to serve add the dressing and toss to coat all the fruit and vegetables. Top with toasted walnuts.
Notes
Tips for BEST resultsThe salad is best when made with fresh fruit. Using frozen berries in this particular preparation will not yield the same results. The best time to prepare this salad is at the height of the summer when fresh berries are bountiful. Of course, berries are available year around but they may not have the same summer flavor. It is best to prepare the salad within a few hours of serving it so all the fruit is fresh. Once strawberries and tomatoes are cut they can sometimes get a little soft.If you do make ahead, wait to add the avocado, walnuts and dressing until the last minute.Give your dressing a taste test and adjust the sugar and salt to your tastes. The passion fruit is very astringent so you may find that the dressing needs a bit more sweetness than the recipe.
