A delicious vegan Cajun style red beans and rice. Easy to make with tons of flavor. Prepare in instant pot for hands-off cooking or use the alternate directions to cook on the stove top.

Pressurize and Depressurize Instant Pot 30 minutesminutes
Turn the Instant Pot on the highest saute setting. When heated, add the olive oil followed by the chopped onions, celery, bell pepper, and garlic. Cook for 5-8 minutes or until tender. When ready, turn the Instant Pot off.

Add the Cajun seasoning, cayenne pepper, bay leaves, tomato paste, red beans, sausage, and broth to the pot and stir to combine.

Place the instant pot lid in place and lock it into position. Make sure the pressure venting valve is closed. Press the pressure cooker setting and make sure it’s set for normal. Set the cook time for 10 minutes.
Place the rice in a pot with 2 cups of water and a pinch of salt. Cover with a lid, bring to a low boil and cook until water is absorbed and tender. Turn off the stove and let the rice sit with the lid on.

When the Instant Pot is done cooking, allow it to release the pressure naturally. This may take 10-15 minutes to fully depressurize. Refer to the safe opening instructions in the Instant Pot manual for more information and instructions.
Taste the beans and season with salt and pepper to taste.

Serve up beans with rice and hot sauce. Garnish with parsley if desired.
Stove Top Directions
Cook the onions, bell pepper and celery in one tablespoon of oil over medium high heat until softened and translucent, about 8 minutes. Add the seasonings, bay leaves, tomato paste, red beans, sausage, and vegetable broth to the pot. Stir to mix it all up. Cover with a lid, reduce the heat to low and simmer for 30 minutes, stirring occasionally.

Notes
Season to Your Tastes. Feel free to taste and adjust the spices. If you are sensitive to spiciness, leave out the cayenne pepper and reduce the cajun seasoning.
Adjust the Consistency. Add more liquid if your beans seem a bit dry after cooking, red beans and rice should be juicy.
Prepping Ahead. Chop the onions, celery and bell pepper up to three days ahead of time. This is an easy way to speed up this meal for busy weeknights.
