An easy to make small batch oatmeal cookies with chocolate chips and banana that are also vegan, low in oil and sweetened with fruit and just a touch of sugar. These homemade oatmeal cookies come out soft, chewy and tasty!
Mix together the sugar, vanilla, oil and mashed banana, pumpkin or applesauce to dissolve some of the sugar.
In a separate bowl stir together the flour, salt, baking soda, cinnamon and oats and stir together.
Add the wet ingredients to the dry ingredients and stir to combine. Next add the chocolate chips and mix it up.
Use a scoop or spoon to measure out the cookies onto a baking sheet.
Cook for 10-12 minutes or until lightly browned and cooked in the middle.
Notes
Use quick oats to make small batch oatmeal cookies for a more tender cookie.
Use dark chocolate chips such as 70% or higher for healthier small batch oatmeal chocolate chip cookies. The bitterness of the dark chocolate makes the perfect contrast for the lightly sweetened cookie.
Be sure to preheat the oven before baking the cookies. When the oven is hot, the cookies start cooking right away and will cook more evenly and quickly.
