Ingredients
1ripe avocadoseeded and roughly diced
½small onionquartered
½small green bell pepperstemmed, seeded, and roughly chopped
3clovesgarlic
½cupcilantro leavespacked in cup, roughly chopped
2tablespoonsparsley leavespacked in cup, roughly chopped
Place all the ingredients in a blender or food processor.
Blend until creamy and smooth. Taste and adjust the seasoning as desired.
Notes
Avocados may vary greatly in their size. For the best balance of flavors, you want to use about one cup of avocado when making this recipe.There's no need to finely chop the veggies. Just coarsely chop it all up and throw it in the blender and let the blender do all the work.Measure the cilantro and parsley by pressing the leaves down into the measuring cup or spoon to fill it up. Or you can chop it into small pieces and then measure it.
