A quick and easy vegan peppermint bark recipe with a layer of minty-flavored dark chocolate drizzled with white chocolate! This easy four ingredient recipe makes a tasty handmade food gift, party favor or sweet treat.
Place a double boiler over medium-high heat. Heat water to a low boil. Add the dark chocolate to the top bowl or pan of the double boiler and melt. Stirring as the chocolate melts. It won’t take but a few minutes.
When the chocolate is completely melted. Add the peppermint extract and stir to combine. Set aside. Quickly clean the double boiler and repeat again with the process to melt the white chocolate.
Pour the dark chocolate onto a baking sheet covered with parchment paper and spread into a thin layer using a spatula.
Swirl the white chocolate over the top of the dark chocolate using a whisk or use a squeeze bottle to make straight lines over the chocolate and then using a toothpick or thin skewer, drag it through the dark chocolate across the white lines creating a decorative top.
Sprinkle the crushed peppermint candies over the top and press it in a bit to make sure it adheres to the white chocolate.
Place the mixture in the freezer to harden. Once it is completely hard (10-15 minutes), break it up into pieces and package up. Keep it stored in a cool, dry place so it doesn’t melt.
