Mix together all ingredients in bowl and place in a lightly sprayed 8 x 8 baking dish or similar size. Place into hot oven and cook for 30 minutes or until all liquid is absorbed. Allow to sit for 10 minutes before serving.
*If you don’t have chia, you can also use a flax egg. Simply substitute 1 T flax meal for the chia and reduce the water to 2 ½ T.**Can also be baked in individual servings. Simply use ramekins or muffin tins and distribute the mixture evenly between the containers. Cook in the oven for 20 minutes. Remove from oven when all liquid is absorbed.
