Tangy Avocado Citrus Salad Recipe with Pomegranate Vinaigrette
A quick and easy salad with the bright flavors of citrus and creaminess of avocado served up with a homemade Pomegranate dressing. It's perfect for a side dish or add on your favorite protein and turn it into a light lunch or dinner.
Combine all the ingredients for the dressing except olive oil together in a blender and mix. Then with the blender on, slowly add the oil. Taste and adjust seasoning as needed.
Place the dressing in the refrigerator until ready to serve.
Salad
Peel the oranges and/or grapefruit with a knife. You want to remove the layer that surrounds the segment. Then cut the side of each segment to loosen the pulp and remove it. The outer rind and inner skin should all be discarded. Cut the pulp into bite size pieces.
Slice the flesh of the avocado into long strips while it is still in the peel. Use a spoon to remove the avocado from the skin. Slice up the red onion.
In a bowl mix together the greens and dressing. Divide up into bowls. Top with oranges, grapefruit, red onion and sliced avocado. Sprinkle each salad with pomegranate seeds.

I love pink grapefruits and navel oranges but you can also explore other specialty citrus fruits like sweet lemons and blood oranges.Toss the greens with the dressing just before serving so the lettuce doesn't get soggy.
