Ingredients
Yogurt Dip
1cupGreek yogurtplain
2clovesgarlicpeeled and minced
1medium cucumberpeeled, deseeded, and diced into small cubes (about 1 cup)
Cut the peeled and deseeded cucumber up into small diced pieces.
Combine the yogurt, garlic, cucumber, feta cheese, dill, oregano, and lemon juice in a small bowl. Stir to combine. Add salt and pepper to taste.
Make the Fritters
Preheat oven to 400 degrees F or 200 degrees C.
Place the grated zucchini in a cheesecloth and squeeze well to remove as much of the moisture as you can.
Combine the zucchini, feta, garlic, green onion, mint, dill, egg, olive oil, flour, breadcrumbs, salt and pepper in a medium bowl. Mix well until moistened and the mixture forms a consistency you can form into a patty.
Use a small cookie scoop to measure out the mixture for fritters. Use your hands to shape them into a ball that is smooth and place them on a parchment paper lined baking sheet sprayed lightly with baking spray. Leave a small amount of space between each one. Press them down to form a thin patty, about ¼ - ½ inch high.
Bake in the preheated oven for 20-25 minutes, flipping over halfway through.
Serve the warm fritters with the dip.

Be sure to squeeze the zucchini well when making baked zucchini pancakes. Zucchini has a lot of water in it and too much moisture may make them soggy. You can use a piece of cheesecloth or a clean kitchen towel for squeezing out the excess water.Grate zucchini with the large holes of a box grater or using a food processor with the grater blade. If it’s too fine the baked vegetable fritters lose some of the color and texture the zucchini provides them.Mix up the dip before making the fritters so it has time to sit and develop the flavors.Grate garlic with a microplane so it blends in easier to the dip.
