Peel potatoes if desired and cut into thick wedges. In a small bowl mix together oil, vinegar, miso and garlic together. Taste the marinade and add salt and pepper as desired.
Pour this mixture over the potatoes and toss until coated.
Lay out potatoes in an even layer on a lightly sprayed baking sheet.
Place in oven and bake 20-25 minutes or until the potatoes are tender. Turn potatoes on the tray at varying intervals to brown all the sides.
Notes
Depending on the saltiness of the miso, you may not need to add additional salt.
