This cheesy quinoa casserole with broccoli makes an easy weeknight dinner solution the whole family will love. Blended vegetables create a sneaky vegan cheese sauce that gives this dish great flavor while keeping it dairy-free.

Ingredients
Vegan Cheese Sauce
8ouncesrusset potatoespeeled and cut into 1-inch pieces (about 1 large potato)
1small carrotpeeled and cut into ½-inch pieces (about ½ cup)
Place the potatoes and carrots in a saucepan and cover with water. Bring water to boil over high heat. Cook until tender, about 12 minutes; drain in colander, reserve the cooking water, cool slightly.
Combine cooked potatoes and carrots, ½ cup cooking water, garlic powder, onion powder, smoked paprika, dry mustard, nutritional yeast, vinegar, and white miso in blender.
Pulse until chopped and mixed together, stopping the blender and scraping down sides of blender jar as needed. It may take a few times for the mixture to come together. Add additional water a tablespoon at a time needed to thin out the cheese sauce. It should coat a spoon but easily drip off.
Add salt and white pepper and process mixture on high speed until very smooth.
Mix up the Casserole
Combine the panko bread crumbs, nutritional yeast, salt, oil, and parsley in a small bowl and toss to combine. Set aside.
Combine the quinoa, 2 cups of chopped broccoli, chopped oregano, parsley, and sauce in a bowl and mix well. Taste and adjust seasoning if necessary.
Transfer to a 9 x 9 casserole dish or similar size. Add remaining ½ cup broccoli over the top, followed by the panko bread crumb mixture.
Bake in a 350 degree F oven for 30 minutes.
Notes
If ingredients are cold you may need to cook 5-10 minutes longer.Makes 4-6 main dish servings or 8- 10 side dish servings.Rinse your quinoa before cooking when prepping for this recipe. This removes the saponins which give quinoa a soapy flavor. Used blanched, not fully cooked broccoli. It will continue to cook in the oven. Make sure to spray the baking dish before adding the quinoa casserole. It will make cleanup easier.Be sure to taste the cheese sauce when done blending and adjust the seasoning to your tastes.
