Chocolatey oatmeal with bananas, cacao nibs and coconut milk is a quick and easy to start off your day! Easy to meal prep too and perfect to add to your weekly meal plan for those mornings when time is short.
1tablespooncacao nibsor dark chocolate chips, optional
1tablespoonshredded unsweetened coconutoptional
2tablespoonschopped nutsoptional
½bananachopped
1tablespoonmaple syrupoptional
Instructions
Combine the milk and oats in a small saucepan. Bring to a low boil, reduce the heat, and cover with a lid. Cook until tender, about 5-6 minutes.
While cooking, peel banana and smash with a fork in a small bowl.
When oats are ready, stir in banana, flax, cinnamon, vanilla, and cacao powder. Split up into two bowls.
Top each bowl with coconut, nuts, cacao nibs and/or chips, sliced banana and drizzle with syrup.

It’s important to occasionally stir the oatmeal as it cooks to keep it from sticking.Vent the lid to prevent the oats from boiling over when added to the milk. If it starts to rise up in the pan, stir with a wooden spoon and it should lower back down in the pan.Add the cacao powder after cooking to retain the nutritional value of the cacao. Heating it may breakdown some of the nutrients and reduce their benefits.Feel free to adjust the flavor to your own taste such as adding more cacao or a sweetener.This recipe uses regular oats. You can use different types of oats but make sure to adjust the cooking time if making steel-cut oats or instant oats.For thicker oats reduce milk by a half cup or for creamier oats increase the milk by a half cup.
