Meaty and delicious mushrooms replace this beef in this vegetarian version of stroganoff. A simple sauce made with mushroom broth, red wine and sour cream is delicious and packed with flavor. Top off this dish with match stick thin potato strips. Perfect to serve alone or on top of your favorite rice or noodles.
Next, cut the slices into thin strips. You want them to be similar in size to matchsticks.
Once cut, place potatoes in salt-water and allow to sit for 20 minutes.
When time elapses, drain the potatoes and dry on a clean towel. Toss them with the 1 tsp of canola oil and bit of salt and pepper. Spread them out on a baking sheet and place them in a hot oven to cook about 20 minutes. Turn and move potatoes frequently on the pan so they don’t burn.
Prepare the stroganoff while the potatoes are cooking.
Clean mushrooms well and remove the stems. Cut mushrooms in half and then into chunky slices.
Heat 1 T olive oil over medium high heat, add mushrooms and sauté just long enough to begin to soften the mushrooms, remove from heat and set aside.
Cut the bunch of green onions at the point where the stem turns from green to white-green, set the green tops aside. Cut the remaining bottoms (white and white/green part) into thin slices. Cut the green tops and set aside to garnish the stroganoff at the end.
Add the additional 1 T olive oil to pan and return to medium high heat, add onions and garlic to pan and sauté until translucent, stirring frequently so they don’t burn. When cooked add red wine to the pan and cook to reduce liquid by half. Then add mushroom broth to pan and heat for 2-3 minutes. Then add the mushrooms and bring to a low boil.
Mix together cornstarch with ¼ cup warm water and add to pan. Continue to cook, stirring frequently until sauce thickens. Add salt and pepper to taste. If the sauce is still too thin, repeat the same process with the cornstarch again.
When sauce is thickened, remove about ¼ cup of sauce and stir into the sour cream, then add this mixture to the pan. Stir to combine.
Top with crispy potato sticks and chopped green onions.
