1small spicy pepperaji amarillo, jalapeno or serrano
½red bell pepper
½small red onion
Salt and pepper to taste
4-8lime wedges for garnish
Preheat oven to 400 degrees F.
Drizzle olive oil on fillets, sprinkle with Peruvian chili lime seasoning*, salt and pepper to taste.
Cook fish in oven*
Place in the oven to cook. Cook until fish reaches your desired doneness. If your piece is fish is about 1-inch thick, it will take about 10 minutes to cook for your fish to medium - medium-well doneness. See below for more information for calculating cooking time.
Cook fish on stove*
Drizzle olive oil into a skillet and allow pan to heat over medium high heat. When hot place the fish in the pan skin side down. If no skin, place the seasoned side face down in the pan first and then sprinkle more seasoning on the side facing up.
Allow the fish to cook without moving for 2-4 minutes or until the side is browned (and skin is crispy). Turn the fish over and cook on the other side for additional time to cook.

Make the salsa
Make the salsa while the fish is cooking. Place in a small mixing bowl as you prepare.
Peel and deseed the avocado and dice into small pieces. Then peel and dice the mango into small pieces.
Clean out the seeds and ribs of both peppers. Cut the red bell into thin strips and then into small diced pieces. Dice the spicy pepper into similar sized pieces. Use the amount of spicy pepper based on the level of spice you prefer. Place both peppers into bowl once diced.
Chop the red onion into small pieces as well and add to bowl along with cilantro. Squeeze lime juice over the salsa and stir to combine. Add salt and pepper to taste.
Once the fish is ready, remove from oven and serve topped with mango salsa and additional lime slices.
*Peruvian chili lime spice from The Savory Spice Shop or equivalent.Cooking time for oven will vary depending on the oven, desired doneness and the thickness of the fish. I suggest measuring the thickness of the fish you are cooking to calculate the cooking time. It will take about 4-6 minutes per ½” thickness.My experience was with cooking in a pan, For a ½ thick piece of tuna it took about 3 minutes on each side for medium well. And the 1 inch+ thicker piece of salmon, it took about 4 minutes on each side to cook it medium.Other options for fish include any cold water fish such as salmon, tuna, bonito, mackerel as these are your best options for healthy fats!
