Ingredients
8ozlinguine. dry
1large zucchini
½cuppesto sauce
1 ½cupswhite beanscooked or canned
2cupscherry or grape tomatoes
½cupbasilchopped
Salt and pepper to taste
Parmesan cheese to sprinkle on topoptional
Instructions
Cut the ends off the zucchini and spiralize to create zucchini noodles on the largest sized noodles. Set aside.
Heat large pot of water to boiling over medium high heat. When it boils, add the pasta and cook until al dente. When the pasta is just about done, add the spiralized zucchini noodles to the hot water and stir to submerge. Immediately drain the pasta and zucchini in a strainer.
While pasta is cooking, heat beans in a small pan over medium heat. When heated through, turn off and drain.
Toss the cooked pasta, zucchini noodles and beans with the pesto sauce.
Cut cherry or grape tomatoes in half.
Split up the zucchini and noodles into 6 bowls. Top with beans, tomatoes, fresh basil and parmesan cheese.
Notes
