Combine all the ingredients into a bowl and set aside.
Pancakes
Place all the dry ingredients into a large mixing bowl.
Gently scramble the eggs with a fork and combine with milk and oil. Mix together and then add to dry ingredients.
Stir everything together to mix. Add the corn kernels and green onions. If the batter is too thick, add water ¼ cup at a time until it reaches a pourable consistency.
Heat a medium pan over medium heat. Lightly coat the pan with baking spray or oil. Pour ⅓ cup of batter into pan. Cook until bubbles pop and edges are beginning to dry out.
Flip over and cook until both sides are golden brown.
Place pancakes onto a baking tray and place in the oven on low (200 degrees F) to keep warm. Continue cooking pancakes until all are ready and in the oven staying warm.
Eggs to top pancakes
When pancakes are ready, cook your eggs as desired. And serve immediately on top of pancakes with tomato avocado salad.
