An easy, savory mushroom side dish with a quick marinade made with balsamic, soy, garlic and miso to serve up with so many different meals. These miso mushrooms take only 20 minutes to prepare, creating delightful roasted mushrooms with so much umami flavor.
Gently wash mushrooms in cold water to remove the dirt. Drain well and place in a mixing bowl. Cut larger mushrooms in half or quarters if needed so they are all about the same size.
In a small bowl, mix together miso, garlic, olive oil, balsamic vinegar and soy sauce. Mix well to dissolve the miso. Sprinkle lightly with pepper to taste.
Add the marinade to the mushrooms and mix to coat all the mushrooms.
Transfer to an oven proof pan or dish and cook for 10-15 minutes or until lightly browned and tender.
