This sesame miso noodle recipe is ready in just 10 minutes for an easy weeknight dinner. A simple creamy miso sauce flavors noodles and can easily be made ahead of time. A simple side dish or main dish recipe with a nice change of flavors and sure to be a family favorite in no time!
In a small bowl mix together the miso, tahini, sesame oil, soy sauce, rice vinegar, red chili flakes, garlic and green onion. Taste and adjust seasonings as desired. You can add more or less of just about any ingredient to achieve the desired flavor.
Cook the noodles according to the package instructions. Drain well but set aside a small amount of cooking water.
Toss the hot, freshly cooked and drained noodles with the sauce. You can add a bit of the reserved cooking water if it’s too thick. Garnish with chopped green onions and sesame seeds.
Notes
Slightly undercook the noodles (also called al dente) when following the package directions. This way you avoid overcooking the noodles. Enjoy these noodles hot or cold! They work great both ways. If you're not serving right away, it's a good idea to plunge the noodles into cold water so they stop cooking and don't end up mushy.
