A quick and easy salad with roasted red pepper flavored hummus and fresh vegetables toppings. Perfect for a lunch on the go or a light summertime meal that doesn't require cooking.
Mix together hummus, red onion, parsley and roasted red peppers. Set aside in refrigerator until ready to serve.
Lay out walnuts on a baking sheet and place in the oven for 8-10 minutes to toast.
Prep up fresh vegetables as indicated in recipe list.
Cut avocados in half, remove seed keeping the halves intact. Place a scoop of hummus on top of the avocado and top with diced olives, tomatoes and cucumber. Sprinkle each half walnuts and oregano.
Serve with chopped lettuce, mixed greens or sprouts and lemon slices fro squeezing.
Notes
Tips for BEST results:Buy ripe avocados close to the time you want to plan to serve.Make sure avocados are ripe when you buy them. They should have a little give when squeeze them. Wait to cut the avocados open until you are ready to serve so they don’t turn brown. If it’s necessary for meal prep to cut ahead of time I recommend squeezing some lemon juice over the exposed avocado flesh so they don’t brown.
