Beetroot Apple Salad With Toasted Walnuts and Creamy Yogurt Dressing
Crisp beets and granny smith apples served up in a homemade creamy yogurt dressing with a hint of orange. A great fruit and vegetable salad to add on to any meal.
Combine all the ingredients to make the creamy yogurt dressing in a bowl. Mix well and place into the refrigerator until you are ready to serve.
Grate the apple and beets and place in a large bowl with red onions and celery. Add the creamy yogurt dressing and mix well. Taste and add salt and pepper as desired. Top with toasted walnuts.

Tips for BEST Results:Apples turn brown almost as soon as you peel or grate them. To keep them from turning, toss them with a bit of lemon or lime juice immediately after grating. Of course, if making beetroot apple salad with red beets, it won’t matter too much since when you mix the apple with the beets they take on the red color of the beets. Toast the walnuts prior to adding them to the salad. Toasting walnuts changes the flavor and also crisps them up a little which enhances the texture in the salad.Definitely use greek yogurt to make this recipe. The greek yogurt is replacing mayonnaise which is commonly used in this type of recipe. However, greek yogurt has a much creamier texture than regular yogurt and works better in my opinion in this recipe.Use fresh orange juice, especially since you need the orange zest anyway.
