Easy Vegan Mediterranean 7 Layer Dip Recipe with Hummus
An easy vegan dip recipe to make for parties or healthy snacks. A 7 layer dip with Mediterranean flavors of tangy tofu feta, hummus and lots of fresh chopped veggies.
Remove the tofu from the package and drain. Wrap a clean towel or cheesecloth around the tofu and place on a baking tray. Place a plate followed by a heavy object on top such as a cooking pot, canister or cookbook and let it sit for 20-30 minutes.
After pressing the tofu, crumble it into small pieces. Mix together the lemon juice, water, apple cider vinegar, salt and oregano. Pour over the crumbled tofu and let it sit under refrigeration for about 30 minutes. The longer it sits the more intense flavor.
Make pita chips
Preheat oven to 400 degrees F
Cut each pita into eight pieces.
Lay them out in a single layer on a baking sheet.
Lightly brush with olive oil.
Bake in the oven until crispy and lightly brown. About 10-12 minutes.
Assemble the dip
Spread the hummus into the bottom of your serving dish.
Sprinkle the tomato over the hummus, followed by the cucumber, then the red onion, red bell pepper and the chopped olives.
Drain the tofu feta well. Sprinkle the tofu feta over the top.
Drizzle a bit of olive oil and squeeze fresh lemon juice over the top of the finished dish. Sprinkle with oregano or parsley and serve with pita chips.

Tips for Best Results:Chop the veggies small to make for easier dipping.Make the pita bread as close to serving time as possible for maximum freshness and crispiness.The veggies in this recipe release some juice as they sit so to keep the dip from becoming watery, it’s best to assemble it just before serving. Prep up the veggies in advance but keep everything in containers to throw together at the last minute.Use your favorite hummus recipe or even store bought hummus when preparing this recipe. Experiment with a variety of hummus flavors to change up the dip.
