Cut the mango fruit as close as you can get alongside the seed on both sides.

Use a knife to cut into each side of the mango flesh, but not all the way through the peel in both directions to make squares. Use a spoon to scoop out the mango and add to a bowl with the cucumber.

Squeeze the lime juice over the mango and cucumbers, add olive oil, chile powder and salt as desired. Garnish with lime squeezes and fresh cilantro.
