Lay the tofu cubes or crumbles out on a parchment lined baking sheet in a single layer and freeze for 1-2 hours. Remove from freezer and thaw it out in the refrigerator.
In a shallow bowl or pie plate, combine the cornmeal, chili powder, cumin, garlic powder, smoked paprika and nutritional yeast salt and pepper and mix together with a whisk until everything is evenly combined.
Spray the basket with cooking spray and place the pieces in the basket of the air fryer. Spray the tops with more cooking spray. Cook for 10-13 minutes at 375° F or 180° C opening halfway through and flip the pieces over
