Wash the outside of the white potato, then cut it into ½ cubes. Place them in a medium bowl and toss with 1 teaspoon olive oil and salt and pepper to taste. Transfer to a baking sheet pan and cook at 400° F for 20 minutes.

Repeat the same process the sweet potatoes. After potatoes have cooked for 20 minutes remove the pan from the oven and use a spatula to move the white potatoes to one end of pan. Add the sweet potatoes to the sheet pan in a single layer and place back in the oven to cook for 20 minutes.

For the bbq chickpeas, mix together the chickpeas with ¼ cup barbecue sauce.

Break up or cut the corn cobs into about 1 inch pieces. Cut the peppers and onions into ½ – 1 inch dice pieces. Place in a bowl and toss with two teaspoons canola oil and salt and pepper to taste.

Remove the baking tray from the oven. Use a spatula to move the potatoes closer together on one end of the pan. Add the veggies, followed by the chickpeas. Put the pan back in the oven to cook for 20 more minutes.

Serve up your bbq chickpeas and veggies with the remaining barbecue sauce and your favorite bbq garnishes.
