Heat the oil in a medium saucepan over medium high heat. Add the onions and carrots and cook until very soft, about 5-8 minutes. Add the garlic and ginger and cook for 30-60 seconds to release the flavor.

Add the curry powder and turmeric powder and stir constantly for about 1 minute to mix into the vegetables and to warm up the spices releasing their aroma. Add the coconut milk, applesauce and ½ cup of water to the pan and if desired the cayenne pepper. Cover with a lid and simmer for 20 minutes.

While the sauce is cooking, start the water boiling for the pasta and cook it to al dente according to the directions on the package. Add the cauliflower and broccoli florets to the cooking pasta in the last 3 minutes.

Transfer the vegetables and coconut mixture to a blender with care to avoid burning yourself. Allow time for the sauce to cool for safer transfer if necessary.

Return the blended sauce to the skillet. Add chickpeas and vegetable broth and cook uncovered until heated through. Taste and add salt and pepper as desired.

Add pasta and vegetables to the sauce and cook just long enough to heat all the ingredients.
