Snap the ends off the asparagus spears. Cut the tips off and set aside separately, then cut the stalks into small pieces .

Saute the garlic, onions and leeks in soup pot with 1 tablespoon of olive oil over medium high heat for about 5-6 minutes or until translucent.

Add the potatoes and vegetable broth to the pot along with the cooked onions, leeks and garlic. Cover with lid and allow to simmer for 10 minutes.

While the soup cooks, blanch the asparagus tips. Bring a small pot of water to boil, add the tips to the water, cook for 1 minute, remove and plunge into cold water.

Add the pieces of stalk to the pot of soup. Cook for 10 more minutes. While the soup cooks, mix together the herb yogurt in a small bowl.

When ready, carefully blend until smooth and return to the pot.

Reheat and add a squeeze of lemon and salt and pepper to taste. Serve up each bowl of soup topped with the herbed yogurt and asparagus tips.
