Easy Cauliflower Carrot Soup

Cook the onion and carrot in olive oil over medium high heat until the onion begins to soften and turn translucent.

Add garlic and cook for an additional 30 seconds.

Add the cauliflower, broth, thyme and bay leaf to the pot and cook on low covered with a lid for 20 minutes or until veggies are tender. When the vegetables are tender, remove from the heat and discard the bay leaf and thyme sprigs. Add the fresh ginger and parsley to the pot.

Blend the soup in the pot with an immersion blender or carefully transfer the soup to the blender and blend until smooth. Return the soup to the pot and add miso, salt and pepper to taste. Cook for an additional 5-10 minutes over medium-low heat.

Serve in a bowl and garnish with fresh sprigs of thyme.
