Place the oil and popcorn kernels in the pot and cover with the lid. Heat over medium-high heat gently shaking the pot to move the kernels frequently.

When the popcorn begins to pop, continue moving the pot so the kernels don’t burn. You will know the popcorn is done when the popping sound slows down. Remove the lid and sprinkle with a little salt.

When the popcorn is ready, spread it out in an even layer on the baking tray that’s lined with parchment paper or wax paper. Try to discard any unpopped kernels of popcorn that you find.

To melt the chocolate, fill the bottom of the pot with water and place over medium high heat to bring the water to a boil. Top the pot with a smaller pan or a metal bowl on top of the heating water. Place chocolate chips or chopped chocolate bar in the top part of the double boiler and stir with a whisk or wooden spoon as the chocolate candy melts. When smooth, remove from the heat.

Use a whisk or fork to drizzle the melted chocolate evenly over the top of the popcorn. Continue drizzling over the top until you’ve used all the chocolate and the popcorn is fully covered.

Add some chopped nuts or sprinkles on top of the melted chocolate if you want some extra pizzazz! Place the popcorn in the refrigerator to chill until the chocolate is hard, about 1 hour.
