Start making the quinoa chocolate by laying out the quinoa on a baking sheet and placing it in a 400° F oven to toast. Cook for 5-6 minutes or until lightly brown. Check it frequently so it doesn’t burn.

While the quinoa is cooking, place the turbinado sugar in a pan and heat over medium heat. Stirring constantly. Cook just until melted or mostly melted. When the sugar is melted, add the quinoa and stir to combine. Once the quinoa and melted sugar are mixed, transfer the mixture to a paper lined tray to cool.

When quinoa has cooled and hardened, place it in a plastic bag and lightly tap with a rolling pin or kitchen mallet to crush into small pieces.

Melt the chocolate in the microwave or on top of the stove, add ⅔ of the caramelized quinoa and the cacao nibs to the chocolate. Stir to combine.

Transfer the dark chocolate to a lined baking sheet. Sprinkle the remaining ⅓ of caramelized quinoa and the sea salt over the top. Place the tray of dark chocolate bark in the freezer for at least 10 minutes to set. When hardened, remove and break up into small pieces. Store in a cool dry place.
