Bring the potatoes to a boil and cook just until slightly tender. Leave them slightly firm. When they are ready, pour them into a colander and let them drain.

Heat the oil over medium high heat and cook the onions and green chilies until slightly softened and translucent.

While the veggies are cooking, wrap up the tortillas in foil.

Add the drained potatoes, water and fajita seasoning to the onions and green chilies. Cook the potatoes until they are fully heated and tender. When the potatoes are just about ready, heat the tortillas in the oven at 350° F.

Serve up tacos topped with salsa and sliced avocado.
