The first step is to make the crust for the pumpkin pie. Mix together the cookie crumbs, almond flour, melted coconut oil, sugar, cinnamon and nutmeg.

Spray a 9 ½ ” pie plate with cooking spray and then press the cookie mixture onto the bottom and sides of the pie plate to create the crust. Place the crust in the oven and cook for 8-10 minutes. It will brown slightly. Remove it when done and reduce heat on the oven to 350 degrees F or 180 degrees C.

While the crust is baking, make the pumpkin pie filling. Add all the ingredients for the filling in a blender and blend until smooth and creamy. When the crust is ready, pour the filling into the cooked pie crust. Use a spatula to spread it out evenly.

Place the pie in the hot oven and cook for 60 minutes at 350° F. Remove the pie from the oven and allow to cool for about 30 minutes before placing it in the refrigerator to completely cool. Chill at least 3 hours prior to serving.
