To start making tofu bolognese, heat the oil in a large dutch oven. Add the onions, carrots and celery and cook over medium heat until the vegetables are soft.

When the vegetables are soft, add the crushed red pepper flakes and chopped parsley, stir to combine and cook for 1 minutes.

Add the wine to the pan of vegan bolognese and continue cooking until the alcohol evaporates, stirring frequently.

Open the cans of tomato and process in a food processor or blender until smooth.

Add the tomatoes and miso to the pot of and season with salt and pepper. Reduce the heat to low, cover with a lid and simmer for 1½ hours. Check the vegan bolognese sauce occasionally while it’s cooking and give it a stir. While the vegan bolognese sauce is cooking, you can make the tofu crumbles.

Crumble up the tofu into small pieces and place in a skillet. Add the soy sauce, olive oil, chili powder, garlic powder, onion powder, paprika and yeast and mix together well. Cook over medium high heat for about 15 minutes stirring frequently. When the tofu is just about finished, add the finely chopped walnuts to the mixture and mix to combine.

Add the cooked tofu and walnut crumbles to the pot of sauce and cook for an additional 30 minutes.

Just before serving your tofu bolognese add the milk and cook to heat.
