Ingredients to Make Roasted Beets

Trim the beet stems and scrub the outside of the beets with a brush.

Transfer to a baking dish and drizzle with olive oil.

Top with fresh herbs and bake covered until tender.

Allow the beets to cool and then remove the peels using your fingers or a small knife.
