If you are using pistachios in the shell, remove all the nuts from the shells and measure them out.

Next, heat up and roast the pistachios. Spread out the shelled pistachios on a baking sheet and place them in the oven at 350 degrees for five minutes.

After cooking, remove the tray from the oven and let cool for five minutes.

When the nuts are cooled, transfer them to a food processor and process until smooth and creamy, scraping down the sides as needed.

The nuts will take at least 8-10 minutes to start to break down and get creamy. Allow the food processor a break if needed to cool down. Above you can see how the nuts started breaking down every two minutes or so of processing.

When creamy, add a pinch or two of salt and process again to mix in. Taste and add more if desired. If you want to add any addtional flavors, add at the end with the salt.
