Ingredients in Fermented Red Cabbage

Slice or shred your red cabbage.

Place the clean cabbage in a bowl with kosher salt.

Massage for up to ten minutes until the cabbage wilts and releases water.

Add the cabbage and liquid to a jar and pack it down so that all the cabbage is submerged under the liquid.

Place a small jar on top or weight to keep the cabbage under the liquid and cover the jar. Leave the jar to sit 5-7 days.
