Bring a pot of salted water to a boil. Add the shelled fava beans to the boiling water. Allow them to cook for about 1-2 minutes. Drain off hot water and then submerge in ice cold water.

Remove the outer peel on the fava beans and discard it.

While the water is heating, cut cheese into cubes and set aside. Prep all the veggies according to the ingredients list. Then combine all the vegetables and cheese into a large mixing bowl and toss to combine. Add the olive oil and vinegar to the veggies.

Then add the rocoto paste plus salt and pepper to taste. Serve it up immediately and garnish with parsley leaves and chilies!
