Chickpeas are mixed with the seasoning and spread in a single layer on a baking sheet.

Cook in the oven for 20 minutes.

While the chickpeas cook, saute celery, bell pepper and onions in a skillet.

Also, start the cooking the pasta to al dente. When cooked, drain and set aside.

Add the milks to the cooked vegetables plus the nutritional yeast and cajun spice. Add cornstarch slurry and cook until thickened.

When the sauce is ready, add the cooked pasta.

Serve the pasta up and top with the roasted chickpeas.
