Make the dressing! Place all the ingredients for the dressing except the oil in a blender. Blend until smooth. Slowly add oil. Taste and add salt and pepper as needed. Set aside until ready to serve.

Toast the walnuts! Chop them into small pieces and place on a baking tray. Place into the oven at 350 degrees F and cook for 5-8 minutes or until toasted and lightly browned. Stir halfway through and keep a close eye on them so they don’t burn.

Prep the fruits and vegetables for the salad. – When ready to serve add the dressing and toss to coat all the fruit and vegetables. Top with toasted walnuts.
