INGREDIENTS TO MAKE THAI MASSAMAN CURRY

chickpeas potatoes coconut milk onion vegan massaman curry paste vegetable broth

Cook the onions until soft.  Add curry paste and cook 2-3 minutes.

Add the coconut milk to the pot.

Followed by chickpeas and potatoes.  Cook until potatoes are tender, about 15 minutes.

Serve up with cooked white or brown rice.
