Heat the oven up to 400° F. Toss the squash and red onion with the oil and then spread out on a baking sheet in a single layer. Cook in the oven for 25 minutes.

Place all the ingredients for the dressing into a jar. Secure the lid on top and shake well to mix it together.

Cut up the avocado and top with a squeeze of lime. Cut the apple in half and remove the seeds, then cut into slices. Place in a bowl and squeeze a lime or lemon over the top to keep them from browning.

Rinse the blueberries and greens. Chop up or tear the greens into small pieces that are easy to eat. Place 1 cup of kale, arugula or other green in a bowl. Arrange the ingredients on top.
