Cook the mushrooms are tender. Add the walnuts, herbs, salt and pepper.

When cooked, transfer to a strainer and allow it to drain completely.

Chop and cook the veggies for the lentil loaf.

Add the soy sauce, tomato paste, oregano, chopped walnuts, and smoked paprika to the pan and mix well

Place the cooked quinoa, lentils, cooked vegetables, oats, salt, and pepper in the food processor. Pulse gently to combine.

Shape the lentil loaf into a cylinder and then wrap in parchment paper to squeeze it tightly.

Lay out the puff pastry with mushrooms in the middle. Place the lentil loaf on top of the mushrooms and then add more on top.

Wrap up the mushroom wellington and transfer it to a baking tray seam side down.

Tuck in the ends and brush with vegan egg wash.

Bake in the oven until golden brown on the outside and hot on the inside.
