INGREDIENTS TO MAKE THE BEST VEGAN QUESDILLAS

flour tortillas refried beans corn kernels red bell pepper red onion jalapeno olive oil guacamole pico de gallo or salsa

Roast the veggies in the oven until tender with slightly browned edges.

Spread the beans on top of the flour tortillas.

Top the refried beans with roasted veggies on one half of tortilla.

Fold the half with only beans over the other half and bake in the oven until sides are browned and crisp.

Cut into triangles and serve with guacamole and salsa.
