Vegetarian Beef Stroganoff

Ingredients in the Vegetarian Beef Stroganoff

Cremini mushrooms Extra virgin olive oil Green onions Garlic White wine Mushroom broth Soy sauce Dijon mustard Cornstarch Salt and pepper Vegan sour cream

Slice washed mushrooms and chop the stems but keep separate.

Chop the green onions. Both the whites and greens and keep separate.

Cook the sliced mushroom tops only until slightly softened. Remove and set aside.

Cook the onion bottoms garlic, and chopped mushroom stems in oil.

Add white wine and cook to reduce liquid by half.

Add the broth, soy sauce, and dijon mustard and cook for 2-3 minutes.

Add the mushrooms back to the pan and cook for five minutes. Then add the cornstarch slurry and cook until it reaches the thickness you want.

Remove from heat and add the vegan sour cream, green onion tops, and seasonings to taste.

Stir until fully combined.
