Easy Vegetarian Enchiladas

What Ingredients Do You Need To Make Vegetarian Enchiladas

Cook the onions in a large skillet until softened.

Add the corn, green chiles, cilantro, lentils, smoked paprika, chili powder, cumin and oregano and cook for 5-8 minutes over medium.

Spread a thin layer of enchilada sauce over the bottom of the pan.

Heat tortilas until slightly soft and you are able to roll without them breaking.  Top each tortilla with 1 tablespoon of green enchilada sauce.

Add a heaping spoonful of the lentil and corn filling on top of the sauce.

Roll up the enchiladas and place seam side down in the casserole dish.

Repeat until all the tortillas are rolled.

Pour the remaining sauce on top of enchiladas and sprinkle with the cheese. Bake  and serve up with chopped cilantro and a dollop of sour cream.
