Cook onions in oil until  soft and translucent. Add the garlic and cook for 60 seconds more.

Add the can of whole tomatoes to the pot along with all the liquid. Break up the tomatoes into smaller chunks with a spoon.

Add the brown rice and cook until rice is tender.

Prep the bell peppers. Cut each one in half and trim out the veins on the inside and remove all the seeds.

When the rice is cooked, add the lentils and the seasonings to the rice and mix it up well.

Stuff mixture into peppers and top with cheddar.

Cover with foil and cook in the oven for 20 minutes or until heated through.
