WHAT YOU NEED TO MAKE STUFFED PEPPERS

LENTILS BELL PEPPERS ONION GARLIC BROWN RICE CANNED TOMATOES OLIVE OIL CHILI POWDER CUMIN OREGANO CAYENNE

Cook the onions and garlic until soft.

Add the tomatoes and use the spoon to break them up into smaller pieces.

Add the rice and water.  Cover with a lid and cook about 30 minutes. 

Cut the peppers in half horizontally and clean out the seeds and veins.

When the rice is ready, add the lentils and spices.

Mix it all up and add salt and pepper to taste.

Add the rice and lentil mixture to the peppers.

Sprinkle with some cheese and bake in the oven for 20 minutes.

Serve up stuffed peppers for an easy weeknight dinner!
