Combine the quinoa with 2 cups of water and bring to a boil. When it boils, reduce the heat to medium low, cover with a lid and cook for 15 minutes or until water is absorbed and quinoa is tender.

While the quinoa cooks, make the dressing. Place the dijon mustard, red wine vinegar, garlic powder, onion powder, oregano and olive oil in a jar and shake it up!

When quinoa is ready, transfer it to a plate or baking tray and spread it out.  Place it in the refrigerator to cool down more quickly.

Combine the cooled quinoa, corn, spinach, tomatoes, green onion and parsley in a large bowl and toss together.

When you’re ready to serve it up mix in the dressing.
