2green or yellow plantains
Spray oil

Instructions
Preheat the oven to 325° F to cook.
Cut the ends off each plantain and slice through the peel without cutting in the flesh of the plantain all the way down the length of the fruit.
Then remove the peel. If using the green plantains the peel will be harder to remove. Use your thumb or a spoon to pry the edge of the peel up in order to remove the peel.
Slice the plantains
Use a mandolin set on 1/16 inch in order to thinly slice the plantain into very thin slices.
Lay the plantains out in a single layer on a baking sheet sprayed with cooking spray. Avoid layering or overlapping slices of plantain. Sprinkle with Salt and pepper if desired.
Cook savory plantains (green)
Place the tray in the oven and cook for 12-15 minutes. Rotate the tray and flip over the chips after cooking for 8 minutes. Continue to cook the remainder of the time or until the chips are lightly browned and crispy.
Cook sweet plantains (yellow)
Place the tray in the oven and cook for 12-15 minutes. Rotate the tray and flip over the chips after cooking for 8 minutes. Continue to cook the remainder of the time or until the chips are lightly browned and crispy.

Thin slices are essential for crispy chips. Use a mandolin or if cutting by hand, go slow and take your time.Cook in batches or on multiple baking trays. The plantain chips should be in a single layer and not overlapping.Buy your plantains close to the time you plan to make your plantain chips. Plantains continue to ripen after you buy them so make sure you keep that in mind when choosing them at the store. If they are dark green you likely have a couple of days, but if they are lighter in color it’s best to cook them immediately.Avoid plantains with brown spots. These will be too ripe to use for making these homemade chips.The plantains will continue to crisp up after cooking as they cool. So if the edges are brown and they still feel a little soft, that’s ok. Let them cool and check again.
